Haut-Bailly unveils the Cellarium: the Château’s former cellars, renovated and put at the service of the art of hosting

Haut-Bailly has always conceived hospitality as an extension of its winemaking standards: discreet, precise and deeply human. With the Cellarium, the estate enriches its experiences in a new setting dedicated to wine lovers: tastings, seminars, board meetings, cocktails or family occasions.

The Cellarium at Château Haut-Bailly

The name, Cellarium — a nod to the English translation of “chai” — refers to its Latin origin designating a room intended to preserve wines and precious goods. Here, it evokes a place dedicated to the conservation, presentation and sharing of wines with enthusiasts from around the world. Spread over more than 1,000 m², the historic building has been rehabilitated by the architect Daniel Roméo, who designed the cellar in 2020. His intention: to open up the volumes without betraying them and to respect the soul of the vat room and the barrel cellar, in order to offer a second life faithful to the elegance of the estate.

The Cellarium brings together three spaces: a wine library for end-of-visit tastings, a space celebrating wine culture and a reception room opening onto the old vines, accommodating up to 140 people for dinners, seminars or cocktails. Outside, the landscape designer Hervet Rosset has devised a gentle transition linking vineyard, garden, lawn and paving, with shrubs and fruit trees for a bucolic atmosphere and an ideal reception setting.

“We conceived the Cellarium as a temple of wine…” stresses Véronique Sanders, Executive President.

Pop-up Dinners
From 30 October until 18 December, the Cellarium hosts pop-up dinners every Thursday. In a friendly spirit, visitors discover the estate over the local cuisine of Chef Maxime Pommier. The single starter-main-dessert menu is offered at €49, with two alternatives at each stage. The wine list brings together some thirty references, by-the-glass service of several vintages and a tasting set dedicated to the wines of Haut-Bailly.
