Château Clos de Sarpe, formerly the property of Baron du Foussat de Bogeron, was bought in 1923 by Jean Beyney. Currently, Jean-Guy Beyney, his grandson, presides over the destinies of the estate. Benefiting from old vines, two thirds of which are between 50 and 80 years old, work in the vineyard is done in the purest respect of tradition: ploughing, manual suckering, disbudding, green harvesting, leaf removal on the east side (and in August on the west side).
As regards treatments, nothing is used, no weedkillers, pesticides or insecticides, … apart from the famous Bordeaux mixture with added sulphur and a supply of trace elements. Cultivation has naturally turned towards organic farming without any specific arrangement but in respect of tradition.
The late harvests are entirely by hand and a very rigorous artisanal sorting is carried out before any other operation in order to ensure the good sanitary state of the crop.
Finally, vinification is geared towards concentrated wines, with a great deal of structured substance able to age thanks to their tannins, an obsession with quality that, without a doubt, aims at the highest rungs of the appellation.
