Cadillac

blanc • liquoreux • 80 ha

The town of Cadillac, which gave its name to the appellation of origin, is situated on the right bank of the Garonne, some forty kilometres upriver from Bordeaux.

It is a very old town, part of which is still surrounded by the substantial remains of a bastide founded in 1280 by Jean de Grailly, Captal de Buch. Cadillac is home to the castle of the Dukes of Epernon, built between 1600 and 1650, which was restored by the Historical Monuments Service after it was damaged, particularly during the Revolution.

The Cadillac region is an integral part of the larger Premières Côtes de Bordeaux region, which is set in a pleasant, sunny landscape.

Created in 1973, the Cadillac AOC was profoundly modified by decree in 1980. According to this decree, it became an AOC for sweet white wines. In fact, to benefit from this appellation, the wines must come from grapes that have over-ripened due to "noble rot" and are harvested by successive selections.

The terroir is generally similar to that of the larger Premières Côtes de Bordeaux region of which it is a part. The relief is uneven, sometimes even steep, as is often the case along the Garonne.

On the hillsides, whose slope and altitude vary in the different parts, clay-limestone soils, gravels of varying degrees of coarseness or sandiness cover a clay-limestone or limestone subsoil that is particularly suitable for vinegrowing.

About the wines

AOC Cadillac wines are elegant, aromatic, fruity and full of sap.

However, as the production of AOC Cadillac wines is currently very low, the producers of this region produce a large volume of red wines benefiting from the AOC Cadillac Côtes de Bordeaux and white wines benefiting from the AOC Premières Côtes de Bordeaux. The wines produced in this region can also benefit from all the regional appellations Bordeaux or Bordeaux Supérieur as long as they fulfill the conditions they must meet to obtain one of these AOCs.
