The estate
Situated in the south of the Saint-Émilion appellation, Château Haut-Simard extends around an elegant group of buildings overlooking its vines. The 4-hectare Haut-Simard cru enjoys a peaceful setting at the foot of the clay-limestone hills. This human-sized estate cultivates a classic, refined identity, faithful to the authentic expression of its terroir. The 40 hectares of Château Simard are located at the foot of the slopes to the south of Saint-Émilion, beyond the railway line.
A history of transmission
Château Haut-Simard is intimately linked to the history of Saint-Émilion and that of the Vauthier family. The estate has long been run with steadfast discretion, but in 2007 it became part of Château Ausone. This family continuity ensures a long-term vision, based on precision, patience and respect for natural balance, while at the same time setting the château on a demanding qualitative course.
A harmonious terroir
The soils at Haut-Simard are predominantly composed of clay resting on a limestone bedrock, typical of the most regular areas of the appellation. This combination provides the vines with a measured supply of water and encourages even ripening of the grapes. Simard’s sandy-loam soils retain water well without compromising the ripening of the grapes.
Cabernet in majesty
Haut-Simard is dominated by Cabernet Franc, complemented by Merlot. On these clay-limestone soils, the Merlot develops a full body, ripe fruit aromas and a velvety texture, while the Cabernet Franc adds tension and depth. The vines, which are around fifteen years old, are tended with constant care and meticulous observation. Cabernet Sauvignon is the master at Simard, giving it power and structure, while Merlot, Cabernet Franc and Petit Verdot add fruitiness and freshness for a full, structured palate.
Precise viticulture
At Haut-Simard, the work in the vineyard is based on observation and adaptation. The vineyard is carefully tended and the yields controlled to preserve the natural concentration of the grapes. The grapes are harvested by hand, at optimum ripeness, to guarantee a faithful expression of the vintage and the terroir.
Vinification with finesse
Extractions are gentle, aiming above all for elegance and precision in the fruit. The wine is matured for around 18 to 20 months in French oak barrels, accompanying the wine without ever dominating it. As a result, Château Haut-Simard produces a harmonious, well-balanced and profound Saint-Émilion, where deliciousness is combined with lasting structure.
