The estate

In brief

Château Canon is located to the south-west of the old town, behind the old church of Saint-Martin, on the famous plateau of the Premiers Grands Crus of Saint-Émilion.
This cru, whose reputation is very old, owes its name to its 18th-century owner, M. Kanon, who from 1760 had devoted the estate entirely to viticulture. M. Kanon was one of the rare pioneers who, on the Haut-Saint-Émilion plateau, aware of the quality of their terroir, had the ambition to produce great wines. In 1770, when the estate was sold at a very high price, the area planted with vines was 13 hectares. In November 1996, the property was bought by the House of Chanel. In the year 2000, Château Canon acquired Château Curé-Bon, Grand Cru Classé of Saint-Émilion. After approval by the classification commission, several plots of Curé-Bon, representing an area of 3.92 hectares, adjoining Canon and other Premiers Grands Crus Classés and judged homogeneous with the Canon terroir, were integrated into it.
A few centimetres of soil, barely what the vine needs to survive, cover the limestone vault of the quarries on which the vineyard is located. This makes it possible to harvest a wine that is both supple and generous, of exceptional finesse and great longevity.
After hand harvesting (with very strict sorting in the cellar), vinification in double-walled, truncated-cone stainless steel vats with built-in temperature control is followed by ageing in barrels (50 to 70% new each year) until bottling exclusively at the estate.
A terroir privileged for the vine, together with a constant concern for quality on the part of successive owners, has continued for more than two centuries to build the renown of the wines of Canon.
In 2011, Château Canon bought Château Matras, Grand Cru Classé, and undertook to use its twelve additional hectares of vines for the production of the second wine, now called Croix Canon. The original 22 hectares of Canon will be used for the blend of the first wine.
